RECIPE - MALAYSIAN CHAR KWAY TEOW
Char Kway Teow is a popular dish in Malaysia, which translates to "stir-fried rice cake strips." Its origins can be traced back to the Chinese immigrants who brought their culinary traditions to the Malay archipelago. It is a classic street food dish consisting of flat rice noodles stir-fried with soy sauce, chili paste, shrimp, bean sprouts, egg, and Chinese sausage, resulting in a savory and slightly sweet taste.
Ingredients:
- 400g (14oz) fresh or dried flat rice noodles
- 3 tablespoons of vegetable oil
- 3 cloves of garlic, minced
- 2 tablespoons of chili paste
- 100g (3.5oz) of shrimp, peeled and deveined
- 2 Chinese sausages, sliced thinly
- 2 eggs
- 200g (7oz) of bean sprouts
- 2 tablespoons of soy sauce
- 1 tablespoon of dark soy sauce
- 1 teaspoon of sugar
- Salt to taste
- Fresh lime wedges and chopped fresh cilantro for garnish
Method:
- If using dried rice noodles, soak them in warm water for 15-20 minutes until softened. Drain and set aside.
- In a large wok or pan, heat 3 tablespoons of vegetable oil over high heat.
- Add minced garlic and chili paste, stir-fry until fragrant.
- Add shrimp and sliced Chinese sausages, stir-fry until shrimp turn pink and the sausages are slightly browned.
- Push the ingredients to one side of the wok or pan, and crack two eggs into the empty side.
- Scramble the eggs until cooked, then mix with the shrimp and sausage.
- Add the soaked rice noodles to the wok or pan, and stir-fry for 2-3 minutes until the noodles are coated with the sauce and evenly heated.
- Add bean sprouts, soy sauce, dark soy sauce, sugar, and salt to taste. Stir-fry for another 1-2 minutes until the bean sprouts are wilted but still crispy.
- Transfer to a serving plate and garnish with lime wedges and chopped fresh cilantro.
