RECIPE: PAD THAI - STIR FRIED NOODLES
Pad Thai is a popular Thai dish that originated in the 1930s as a way to promote Thai cuisine and ingredients to the international community. It consists of stir-fried rice noodles with vegetables, peanuts, and a flavorful sauce made with tamarind, fish sauce, and palm sugar.
Ingredients (Serves 2):
- 200g rice noodles
- 2 tablespoons oil
- 2 cloves garlic, minced
- 2 medium eggs, beaten
- 50g tofu, diced
- 50g bean sprouts
- 1 red capsicum, sliced
- 2 green onions, sliced
- 1 tablespoon chopped peanuts
- 2 tablespoons fish sauce
- 2 tablespoons tamarind paste
- 1 tablespoon palm sugar
- 1 tablespoon soy sauce
- Lime wedges for garnish
Instructions:
- Soak the rice noodles in hot water for about 15 minutes or until soft. Drain and set aside.
- In a large wok or frying pan, heat the oil over medium-high heat.
- Add the garlic and stir-fry for 30 seconds.
- Add the beaten eggs to the pan and scramble until cooked. Remove from the pan and set aside.
- Add the tofu and stir-fry for 2 minutes.
- Add the noodles, bean sprouts, red bell pepper, and green onions to the pan and stir-fry for 2-3 minutes.
- In a small bowl, whisk together the fish sauce, tamarind paste, palm sugar, and soy sauce.
- Pour the mixture over the noodles and stir to combine.
- Return the scrambled eggs to the pan and stir to incorporate.
- Serve the pad thai with a sprinkle of chopped peanuts and a lime wedge on the side.
