RECIPE: PAD THAI - STIR FRIED NOODLES

Pad Thai is a popular Thai dish that originated in the 1930s as a way to promote Thai cuisine and ingredients to the international community. It consists of stir-fried rice noodles with vegetables, peanuts, and a flavorful sauce made with tamarind, fish sauce, and palm sugar.

Ingredients (Serves 2):

  • 200g rice noodles
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 2 medium eggs, beaten
  • 50g tofu, diced
  • 50g bean sprouts
  • 1 red capsicum, sliced
  • 2 green onions, sliced
  • 1 tablespoon chopped peanuts
  • 2 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 1 tablespoon palm sugar
  • 1 tablespoon soy sauce
  • Lime wedges for garnish

Instructions:

  1. Soak the rice noodles in hot water for about 15 minutes or until soft. Drain and set aside.
  2. In a large wok or frying pan, heat the oil over medium-high heat.
  3. Add the garlic and stir-fry for 30 seconds.
  4. Add the beaten eggs to the pan and scramble until cooked. Remove from the pan and set aside.
  5. Add the tofu and stir-fry for 2 minutes.
  6. Add the noodles, bean sprouts, red bell pepper, and green onions to the pan and stir-fry for 2-3 minutes.
  7. In a small bowl, whisk together the fish sauce, tamarind paste, palm sugar, and soy sauce.
  8. Pour the mixture over the noodles and stir to combine.
  9. Return the scrambled eggs to the pan and stir to incorporate.
  10. Serve the pad thai with a sprinkle of chopped peanuts and a lime wedge on the side.
