RECIPE - CHICKEN & MUSHROOM PENNE IN CREAMY WHITE WINE SAUCE
Creamy chicken and mushroom pasta is a classic dish that combines tender chicken, earthy mushrooms, and a rich creamy sauce with al dente pasta. This version uses penne, but it also works well with long flat pasta types such as fettucine, linguine or parpadelle.
Ingredients (Serves 4):
- 400g (14 oz) penne pasta
- 2 chicken breasts, sliced into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 200g (7 oz) mushrooms, sliced
- 1 cup chicken broth (240ml)
- 1 cup heavy cream (240ml)
- 1/2 cup grated parmesan cheese (50g)
- Salt and pepper to taste
- Fresh parsley for garnish
Method:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and garlic and cook for 2-3 minutes until softened. Add the mushrooms and cook for another 5 minutes, or until the mushrooms are tender.
- Add the chicken broth to the skillet and bring to a simmer. Allow the broth to reduce by half, then stir in the heavy cream and parmesan cheese. Season with salt and pepper to taste.
- Return the chicken to the skillet and stir to combine with the sauce. Simmer for another 5-7 minutes, or until the chicken is cooked through.
- Serve the chicken and mushroom pasta hot, topped with fresh parsley.
