RECIPE - CHICKEN & MUSHROOM PENNE IN CREAMY WHITE WINE SAUCE

Creamy chicken and mushroom pasta is a classic dish that combines tender chicken, earthy mushrooms, and a rich creamy sauce with al dente pasta. This version uses penne, but it also works well with long flat pasta types such as fettucine, linguine or parpadelle.  

Ingredients (Serves 4):

  • 400g (14 oz) penne pasta
  • 2 chicken breasts, sliced into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 200g (7 oz) mushrooms, sliced
  • 1 cup chicken broth (240ml)
  • 1 cup heavy cream (240ml)
  • 1/2 cup grated parmesan cheese (50g)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned on all sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onion and garlic and cook for 2-3 minutes until softened. Add the mushrooms and cook for another 5 minutes, or until the mushrooms are tender.
  4. Add the chicken broth to the skillet and bring to a simmer. Allow the broth to reduce by half, then stir in the heavy cream and parmesan cheese. Season with salt and pepper to taste.
  5. Return the chicken to the skillet and stir to combine with the sauce. Simmer for another 5-7 minutes, or until the chicken is cooked through.
  6. Serve the chicken and mushroom pasta hot, topped with fresh parsley.
