RECIPE - SIMPLE BAKED MAC & CHEESE

Macaroni and cheese is a classic American comfort food that has been enjoyed for generations. The dish originated in the United States during the late 1700s and was inspired by the traditional Italian pasta dishes that were popular in the country. Today, macaroni and cheese is loved worldwide and can be served as both a side dish or a main course.

This is a simple baked version that is easy to make and is sure to impress guests at the dinner table.

Ingredients:

  • 500g (1 pound) elbow macaroni
  • 115g (1/2 cup) unsalted butter
  • 115g (1/2 cup) all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 950ml (4 cups) milk
  • 225g (2 cups) grated cheddar cheese
  • 225g (2 cups) grated Monterey Jack cheese

Method:

  1. Preheat your oven to 190°C (375°F).
  2. Cook the macaroni according to the package directions. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat.
  4. Whisk in the flour, salt, black pepper, mustard powder, and cayenne pepper (if using) until smooth.
  5. Gradually add the milk, whisking constantly, until the mixture is smooth and well combined.
  6. Bring the mixture to a simmer and cook for 2-3 minutes, or until it thickens.
  7. Stir in the grated cheddar and Monterey Jack cheese until melted and smooth.
  8. Add the cooked macaroni to the cheese sauce and stir until well coated.
  9. Pour the macaroni and cheese into a 9x13 inch baking dish.
  10. Bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
  11. Let the macaroni and cheese cool for a few minutes before serving.
