RECIPE - SPAGHETTI VONGOLE

Spaghetti Vongole is an Italian dish that is believed to have originated in the coastal regions of Naples and the surrounding areas. It is a simple yet flavorful pasta dish made with clams, garlic, and olive oil. This dish is a staple in Italian cuisine and is enjoyed all over the world for its fresh and delicate flavors.

Ingredients (Serves 4):

  • 400g spaghetti
  • 1 kg fresh clams, scrubbed and rinsed
  • 5 cloves of garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup extra-virgin olive oil
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Method:

  1. In a large pot, bring 4 liters of water to a boil and cook the spaghetti according to the package instructions. Reserve 1 cup of the pasta water and drain the spaghetti.
  2. In a large saucepan, heat the olive oil over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
  3. Add the clams and white wine to the saucepan and cover. Cook until the clams have opened, about 5 minutes. Discard any clams that do not open.
  4. Add the spaghetti to the saucepan with the clams and toss to combine. If the spaghetti seems dry, add some of the reserved pasta water.
  5. Season with salt and pepper to taste, and sprinkle with chopped parsley. Serve immediately.
