RECIPE - SPAGHETTI VONGOLE
Spaghetti Vongole is an Italian dish that is believed to have originated in the coastal regions of Naples and the surrounding areas. It is a simple yet flavorful pasta dish made with clams, garlic, and olive oil. This dish is a staple in Italian cuisine and is enjoyed all over the world for its fresh and delicate flavors.
Ingredients (Serves 4):
- 400g spaghetti
- 1 kg fresh clams, scrubbed and rinsed
- 5 cloves of garlic, minced
- 1/2 cup dry white wine
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon red pepper flakes
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Method:
- In a large pot, bring 4 liters of water to a boil and cook the spaghetti according to the package instructions. Reserve 1 cup of the pasta water and drain the spaghetti.
- In a large saucepan, heat the olive oil over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
- Add the clams and white wine to the saucepan and cover. Cook until the clams have opened, about 5 minutes. Discard any clams that do not open.
- Add the spaghetti to the saucepan with the clams and toss to combine. If the spaghetti seems dry, add some of the reserved pasta water.
- Season with salt and pepper to taste, and sprinkle with chopped parsley. Serve immediately.
