Santoku style knives are designed to be multi-purpose. They feature a slightly curved double edged blade for slicing and dicing with a sharp tip for piercing. They are a good compromise between a larger 'gyuto' style chef's knife and a smaller paring knife and are ideal for both meat and vegetables.

The molybdenum vanadium steel construction gives high resistance to rust and corrosion, as well as enhanced hardness for longevity and easier sharpening in the kitchen. These knives are rated for a Rockwell Hardness of 56-58 and are made in Tsubame, Japan.
